Recipe from the Ladies Rally at Berkhampstead The Starter Jan Weedon made. Salmon And Spinach Roulade. Ingredients 15g Butter 170g Frozen chopped spinach 15g Plain Flour 4 Eggs, size 3, separated Salt and freshly ground black pepper 3 Tablespoons of fresh parmesan cheese, grated A pinch of freshly grated nutmeg Extra parmesan cheese for dusting 12 x 8" Swiss roll tin, greased and lined For the filling; 2 Tablespoons good quality mayonnaise 3 Tablespoons Greek-style yogurt 60g Peeled Prawns 60g Smoked Salmon (Or substitute prawns for salmon) Juice of half fresh lemon 1 Tablespoon freshly chopped Dill ( save few sprigs to garnish) Set the oven to gas mark 5, 375 f, 190c. Melt the butter in a large pan. Add the spinach and cook for 2 to 3 minutes over a low heat to remove the excess water. Stir in the flour and cook for 1 minute. Remove pan from heat and allow to cool. Beat in the egg yolks and season well with salt, freshly ground black pepper and nutmeg. Whisk the egg whites until stiff but not dry. Carefully fold the egg whites into the spinach mixture. Pour into the prepared tin and smooth he surface. Sprinkle with the 3 tablespoons of fresh Parmesan cheese. Bake for 13 - 15 minutes or until firm to touch.
Leave the roulade in the tin for 5 minutes, then turn it out onto a sheet of greaseproof paper dusted with the extra Parmesan. Carefully remove the backing paper and trim the edges.
Mix all the ingredients for the filling together, spread over the "roluade" and roll up carefully like a "Swiss roll" Serve garnished with fresh dill
Recipe for Chicken Crunch as follows to serve 4 Cook one whole chicken, shred it into a oven proof dish along with chopped onion, then add at least three tins of Campbells Condensed soup, two chicken and one mushroom (may be a little fluid added preference) or 4 tins soup, cover with grated cheese and breadcrumbs and pop into the oven for 45 mins 200c or gas mark 5
Sticky Toffee Pudding SPONGE 2oz Margarine, 6 oz Granulated Sugar, 8oz SR Flour, 1 egg (beaten) 8oz stoned dated ½ pint boiling water, 1 teaspoon vanilla essence, 1 teaspoon Bi-carb Soda, SAUCE 1 ½ OZ BUTTER, 2 ½ OZ dark brown sugar, small carton double cream (I always make double sauce one half for the pudding other half for extra over pouring when you serve it) 1 Put dates in a bowl and toss in a spoonful of flour 2 Pour ½ pint boiling water over dates and stir in the bi-carb and vanilla essence 3 Cream margarine and sugar until smooth Sift in half of flour, add egg and beat. Then beat in rest of lour 4 Add date mix to creamed mixture, to form a batter. Mixture rather runny dont worry Pour in a greased 7 x 11 dish, put in centre of oven reg 5 (375 deg F/165 degC) for 1 hour (may need extra 10 mins test to see if firm, but springy) SAUCE Cream together all 3 sauce ingredients and simmer in saucepan for 3 minutes. Pour over warm pudding and put under ot grill for one minute will bubble watch carefully so as not to burn (If doing double mixture dont forget to only pour over half) This freezes beautifully, with or without the sauce being grilled on it
